Feeding Ratios
1:1:1 ratio (starter:flour:water) for maintenance. Use 1:5:5 or 1:10:10 for extended storage.
Peak Activity
Use starter at peak (doubled, bubbly, domed top). This is typically 4-8 hours after feeding at 75°F.
Hydration Level
100% hydration (equal weights flour and water) is standard. Adjust for stiffer or looser starters.
