Active Dry Yeast

Source

Granulated yeast that requires proofing in warm water

🌡️
Activation Temp
105-115°F (40-46°C)
⏱️
Activation Time
5-10 minutes
🔬
Proofing
Required - must dissolve in warm water with sugar
📦
Storage
Cool, dry place or refrigerator after opening
📅
Shelf Life
2 years unopened, 4 months opened

Tips & Notes

  • Always proof before using to ensure viability
  • Add a pinch of sugar to activate
  • Water too hot (>120°F) will kill the yeast
  • Bubbles after 5-10 minutes indicate active yeast
  • Can substitute instant yeast 1:1 but must proof

Instant Yeast

Target

Fast-acting yeast that mixes directly with dry ingredients

🌡️
Activation Temp
120-130°F (49-54°C)
⏱️
Activation Time
No activation needed
🔬
Proofing
Not required - can mix directly with flour
📦
Storage
Freezer for best results, or refrigerator
📅
Shelf Life
2 years unopened, 4-6 months opened

Tips & Notes

  • Can be mixed directly with dry ingredients
  • Works faster than active dry yeast
  • Tolerates higher temperatures than active dry
  • Ideal for bread machines and quick rises
  • Also called rapid-rise or bread machine yeast

💡General Yeast Guidelines

Testing Yeast Viability

Mix yeast with warm water (105-115°F) and a pinch of sugar. If it bubbles and foams within 10 minutes, it's active and ready to use.

Common Packet Sizes

Standard packet = 7g (2¼ tsp). This typically works for 3-4 cups of flour. Adjust quantities based on your recipe requirements.

Temperature Matters

Yeast dies above 140°F (60°C). Optimal rising temperature is 75-85°F (24-29°C). Cold slows rising but develops flavor.

Storage Best Practices

Keep yeast in an airtight container. Refrigerate after opening. Freeze for long-term storage. Always check expiration dates.

Yeast Conversion Tips

Instant Yeast

Mix directly with dry ingredients. No proofing needed. Works 25% faster than active dry yeast.

💧

Active Dry Yeast

Dissolve in warm water (105-115°F) for 5-10 minutes before using. Look for bubbles to confirm activity.

🧊

Fresh Yeast

Store refrigerated, use within 2 weeks. Crumble into warm liquid before using. Most perishable type.

🥖

Sourdough Starter

Natural leavening takes longer but adds complex flavor. Reduce flour and water to compensate for starter.
